Tofu Spring Rolls

Tofu spring rolls! An easy, yummy, filling, and healthy way to enjoy your next meal. The ingredients are fresh and easy to prepare, and assembling the rolls is a breeze once you get the hang of it. This Vietnamese adaption would be perfect for breakfast, lunch, or dinner! It is also an extremely versatile recipe for any taste buds, diet, or health restriction.

  1. Step 1

    Cook glass noodles according to package.  

    In a medium pan, lightly fry the tofu in the soy-sauce until brown. Place cooked pieces on a paper towel. 

  2. Step 2

    Set out the rest of your ingredients in an easily accessible manner to build your spring rolls.  

    Dip a piece of rice paper into a plate of lukewarm water quickly. In and out is the way to go. Do not let it become soft in the water. As you set the wet piece onto a plate or cutting board, let it sit until it becomes soft and malleable (about one minute).  

  3. Step 3

    Once your rice paper is ready, you can add your ingredients. For example, one or two pieces of matchstick tofu, some of the julienned cucumber, a handful of lettuce, a bit of glass noodle, and two basil leaves. You can add and subtract to your tastes. 

    Make sure your fillings are in the middle of the sheet.  

  4. Step 4

    After you add your fillings, wrap the roll like a burrito. Take one end of the paper and fold in over the fillings, then take both left and right sides of the piece and fold them over the filling as well. Then roll the filling and folded pieces until you reach the end of the rice paper. 

    Serve immediately with your dipping sauce of choice and enjoy!

Note

2 Dipping sauces go well with these spring rolls. They are the Peanut Dipping Sauce and the Vietnamese Sweet Dipping Sauce. Both of these sauces have recipes on the website!

Adaptations:

Don’t like tofu or can’t eat soy? You can substitute this protein with any other! From beef to chicken, beans, fish, or even pork—whatever your heart desires!  

If you are gluten free, simply replace the soy-sauce with coconut aminos or tamari gluten-free soy-sauce. No ratio needed; they are direct substitutes! 

This dish has the capacity to be vegan, vegetarian, or any other diet you choose—simply add or retract ingredients accordingly.
