Description

This side dish is refreshing, flavorful, and so easy to throw together! It’ll also be a testament to your chopping skills, as you’re going to be going through a lot of veg. Moreover, it’s an easy way to add nutrients to any meal and it’s yummy enough that maybe your kids will even take a bite!  

It’s perfect for the summer, and I hope you enjoy it as much as I do!  

Ingredients
  • 1 Finely diced medium jicama
  • ½ Small red onion
  • 1 Finely diced jalapeno 
  • 2 ears grilled corn (the kernels)
  • 1 Thinly sliced scallion (white and green)
  • 1 tablespoon Olive oil 
  • To taste pinches Cayenne pepper
  • ¼ cups squeezed lime juice
  • Handful Chopped fresh cilantro 
  • To Taste Salt
  • To Taste Pepper
Instructions
  1. Step 1

    Toss all ingredients into a medium bowl and mix well. 

  2. Step 2

    Serve as a side dish to your favorite protein and enjoy!

Adaptations 

For more texture, feel free to add avocado or radish as a garnish!
