Paired with a protein and a cold drink, this breakfast is a wonderful addition to the morning lineup. I love to make this recipe ahead of time and pop the batter in the fridge for use the next day.
Combine dry ingredients in a medium bowl
Combine wet ingredients in a separate medium bowl
Slowly pour the wet ingredients into the dry ingredients, mixing well with a whisk continuously
Once mixed, ladle ½ cup portions into a greased pan and cook until bubbles start to form on top of the cakes, then flip
Serve with a pat of butter and maple syrup drizzled over top
