Apple Pancakes

Description

The perfect sweet breakfast for lazy Sunday mornings, apple pancakes filled with tart, juicy apples will satisfy your cravings. Paired with a protein and a cold drink, this breakfast is a wonderful addition to the morning lineup. I love to make this recipe ahead of time and pop the batter in the fridge for use the next day.  

Ingredients
    Wet Ingredients
  • 1 1/2 cup shredded green apple (shred on large grate(a))
  • 1 cup oat milk
  • 1/4 cup butter (melted(b))
  • 2 large eggs (b)
  • 1/2 teaspoon vanilla extract
  • Dry Ingredients
  • 1 1/2 cup flour
  • 1 1/4 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup sugar
Instructions
  1. Step 1

    Combine dry ingredients in a medium bowl  

  2. Step 2

    Combine wet ingredients in a separate medium bowl 

  3. Step 3

    Slowly pour the wet ingredients into the dry ingredients, mixing well with a whisk continuously 

  4. Step 4

    Once mixed, ladle ½ cup portions into a greased pan and cook until bubbles start to form on top of the cakes, then flip 

  5. Step 5

    Serve with a pat of butter and maple syrup drizzled over top
